Cool start RS7-G5 pretty much has this option, if you want to cut the starter wire from the key column the module would still supply power to the starter solenoid but you would never be able to crank it with the key.

no idea of the issues that would cause but if you remote start it and tap the brake w\o the key it shuts off. It's also stupid easy to install... although I paid a place because I didn't want to mess it up. Super good range and 2-way remote, though if it doesn't start on the first try it won't realize it, but you can customize a lot of things including crank time and delay.
