I just bought a 96 F-250 powerstroke with a 5 speed and 220,00 miles on it.

I want to be able to pull in my local workhorse class and hope to be able to put 500 to 600 hp to the ground. What is going to be the first thing to break? What kind of tips do you guys have for a beginner

You got a lot to do to get to 500 hp for starters.

Tips, get an e locker or spool for the front end. Of course a limited slip at least for the rear. Traction bars and hang all the weight you can if allowed.

Some pulling bodies require the following; upward exhaust, drive shaft loops, kill switches. 500 HP will be in more than the stock class for sure as you won't be able to get it without a larger turbo/injectors. Some have turbo inducer classes such as 2.5, 2.8, 3.0 To compete in these 2.5 450-550 2.8 550-750 3.0 750+.

I am not trying to discourage you at all, pulling is very exciting and addicting though so be ready to go broke!
