Gotta a quick newbie ? why do they NOT want you to run the chip setting higher than 50hp while towing? I have a 2000 F350 7.3 CAI, 5 inch from turbo to 6 inch stacks. 6 speed manual

Under high power levels, that means a lot of fuel and advanced timing. Yes, there's much more to it, but in a nutshell. Well, you have more weight holding you back when all that power is trying to go forward. Things are strained more than normal.
so if I watch my egt's and keep it under 1200 would I be ok that is once I'm up to highway speed. I can always turn it back a notch if I'm going to start climbing a hill. What I mean is could I run say at 75 or 100hp
