I went to WyoTech Laramie campus, did the diesel program, ASM and chassis fab. I knew a bit about diesel going into the program but they teach more by the book and the proper way to do things. The school is also very keen on attendance and appearance, coming from the military you should have no problem with that. ASM is a how to business class, i dont recommend it unless you plan to run your own business. Chassis Fab is a difficult class but was the most rewarding for me.
As for jobs, I graduated in March 08 got a job at Caterpillar in May 08, starting pay around 14.50 with a raise every six months, Feb 09 economy hit the ****ter, got laid off, had a new mechanic job within 3 weeks.
The education will work for you in getting a job if you take it seriously and you present yourself to employers in a way that shows you went to school, you learned and you know what your are doing, 3/4 of the students are there because they couldn't cut it in college and/or their parents just wanted to send them away, and in my opinion they give the school a bad rep. As for uti, my biased opinion is that that is where the quicky lube techs go to school.
