In a bone stock truck, not really. BUT, as far as longevity, especially if tuned, I would do gauges before tune. That way you can monitor your 'normal' levels and then, if somethings starts going south, you will notice before a major failure.
Even a stock truck can exceed the 1250 degree EGT redline, so yes all diesels should have the three basic gauges.
