Built 7.3 to 400hp vs Built 6.0 to 400hp. Which one should I go with?

Ok I'm going to be specific so hopefully no one is left reading this with questions. I am thinking about doing a project chassis cab (f450 or f550) anywhere from 08 and up. I am debating whether I drop a built 7.3 or 6.0 to around 350-400hp and anywhere from 650-800 foot pounds of torque. This would obviously be used for towing and utilitarian applications. These are my questions ranging from most important to least important:

Which one would be more reliable in the long run?

How well can I cold start these with these power numbers (I know they're both HPOP power stroke so they aren't very good at cold starting in the first place but still. I live where it easily gets down below zero)?

How much would it cost to build each one to those numbers (considering this hypothetical 7.3 is one with forged connecting rods)? This includes the cost of buying the engine second hand.

How long would it be before I would have to rebuild?

Again it has nothing to do with the trucks these engines came in since I will be putting said engine in a newer chassis. It is purely a comparison of the engines side by side. Please ask any questions. Thanks!

do you define a 400 hp 7.3 as "built" ?
7.3 that has it's common problems nearly elevated, while having the parts necessary to support 350-400hp and 650-800 ft or torque. Which also means the parts necessary to make it a truck that can tow up to 16,000-20,000 pounds without having to worry about EGT's cooking the engine. This would apply to a built 6.0 too. Does that help? I know they aren't extremely specific numbers but it's purely so that there is leeway for this build to be possible.

Long term, the 400hp 7.3 will generally outlast a 400hp 6.0. 7.3 is cheaper to work on, parts are readily available. 6.0 is more fun to drive as the fuel system is a bit better and has better throttle response.

I own a 7.3 with 560hp and a 6.0 with 625hp.

A good running used 7.3, a set of 160/30 injectors, and other supporting mods will get you a solid 400hp.

If you are interested, we have just about everything in stock and build our own injectors.
