First off, welcome to the Organization! You've made a great purchase, the 7.3 is a SOLID foundation for several different platforms. Besides changing the oil on a regular basis (as wells as fuel and oil filters) there isn't much more maintenance that require immediate attention.
One thing you may want to look at doing soon is to get a new water pump. Bosch make a great water pump for our trucks (around $140) and replace the stock thermostat with one from DieselSite (it's a 203 degree stat). Other than that, nothing much. Have fun!
all 7.3 PowerStrokes do, (94.5 and up) there was an IDI 7.3 prior to that, late ones had turbos earlier ones did not. The IDI's are not PowerStrokes, they are often confused.
