Loss of power?

Hello: We recently did some repairs and everything seemed to go well but now having loss of power issues. We replaced the oil cooler & high pressure oil pump.
1. What is normal oil temp?
2. Doesn't seem to have as much power as before. Used to spin tires and start to get sideways with a little bit of a heavy foot, now she just goes.
3. Has a really hard time shifting out of first before it gets warmed up. Like I have the pedal to the floor and I may get to 5 mph.

Thoughts, suggestions?

normal oil for OEM cooler is 0-15* above the coolant temp so 190-213 for a quick reference to what i see driving towing in AZ
