What Size Wheels Should I Go With?

Long story short, folks, I had a set of 325/65/18's on Mazzi Hulks, and I had a shop take the shot tires off so I could refinish the wheels...They ruined the wheels, so now they're crediting me $500 towards replacement (my cost for the wheels)

So the question is, do I go with 18's again (I'm leaning away from 18's simply because there is a slim wheel selection on discount tire) or do I go with 16's or 17's?

I'm thinking about 17's, but if I go with 16's, I save a decent amount of coin. The truck is purely street driven, with maybe a dirt road or 2, but certainly not an off-roader. Basically, I'll wind up saving $160 to go with the 16's, but I'm not sure if there's any benefit to the smaller wheel, and personally, I like the look of the larger.

If I go with the 17's, I'm going with Hankook Dynapro A/T tires. Probably going to do the same with 16's. If I go up to 18's, I'll probably go with the Terra Grapplers. Tire size options are as follows: 315/75/16, 315/70/17, or 325/65/18.

What would you guys do here?

Budget of $1500, but obviously the less expensive, the better, but I'm not going to compromise on tire quality.
