You won't have any trouble at all. Backing can be done but you have to react quickly to do it. As far as being legal, I don't think anybody knows what is legal and what isn't. If you ask 3 officers you get 3 different answers and none match what you find on a web site. I pulled two tag along trailers with carnival rides all over VA, NC, SC, and GA with no problems. I even drove past weigh stations with it. In fact here in GA I saw a fifth wheel camper with a truck in tow with a boat hitched to the truck. That even scared me.

I pull doubles all the time in colorado we have a 30 ft 5th wheel and a 16ft flat bed with all the toys. Backing is not to bad you just have to think backwards. the best way to stay out of trouble is look ahead. and you are right nobody knows the real law even the cops dont know how to read it. Have fun and be carefull.
