leaf spring question/help

ive got a '99 2wd fat bottom. i want to bring the rear down to level it out at least 5"s. im gonna add helper bags for towing and hauling. my question is which leafs do i remove?? i looked at the spring pack and theres a helper leaf on top then a block, maybe 1.5" then another longer helper leaf. can i remove all of that, and will it be enough??
