Can I pick your brain a bit about a WVO conversion?

I have a 2003 E450 bus I want to do a 2 tank conversion on. 7.3L
I am very mechanically inclined with an engineering and machining background so I am willing to tackle and prefer a DIY approach over a kit. Plus my budget prefers that also.
I have done some research online but honestly it takes forever to find realistic info.
I have oil, I have a 3 foot tall commercial canister sock style filter, but I have some questions about dewatering, and the actual vehicle setup.
Would you mind offering some advice?

how much hp/torque does your truck have? could it pull a gooseneck trailer with a big tractor or big load of trees on it? like stock?
