Noob from Utah

So I have been lingering for a few weeks while I learn what I can about diesels, man trucks, and anything else that catches my fancy. I am looking to buy a used truck in the next month or so and have tried my hardest to figure out what I want because I really don't need a truck, well, kind of. I have two great danes and for the last few years they travel in the back of our Camry. I am tired of them slobbering on me while I drive down the road. We are getting a truck to get them in the bed where we can all be more comfortable and safe.
I am looking to spend between 15k and 20k on a truck. That puts me in the 04-07 6.0 range. I have gone from really nervous to meh, after reading a ton of posts on 6.0 reliability and what to monitor to stay away from catastrophic failures. I guess I would consider myself a Ford man as I am not really looking at dodges or chevys.
Any truck I buy will not be a daily driver. I have a work supplied car that I can use personally as long as I stay in the county (unmarked police car that doesn't look like one) that I take full advantage of. My parents have a 24' Jayco bumper pull I'd like to borrow on occasion. I do like to fish and would take it frequently up the mountains. What I really want is a nice F250 that I can buy now and drive it maybe 10k miles a year and keep it forever. This is why I have gravitated to the powerstrokes, they just keep going...
Couple questions:
1- I understand that I would be fine with a Ford Ranger for what I will generally be doing and that a diesel is super overkill. Am I silly for buying a diesel? Should I be getting a gasser? Do gassers have their own problems that would be just as much of an issue as the 6.0's have had?
2- Should I just buy a CTS and run it on any truck before I buy to see what kind of condition it is in?
3- If I can find a 6.0 that has been taken care of (no chip, no major mods, regular maintenance) and I watch the deltas I shouldn't have any other major problems right? There is no need to install studs unless the egr blows up first. If I take care of it, it should take care of me kinda thing. I am not interested in a lift or any tunes. I just want it stock with a bed shell.
If anyone is still reading I thank you. Just trying to get this all sorted out so I can make an informed decision.
