Please point me in the right direction!

I will admit that I am new to the site, please guide me along. First off I have a 2001 Excursion 7.3L with 300K miles on her. I have a performance issue with it and the dealerships can't find the problem.
Here's what it is doing...when you accelerate, it runs as if it is running out of fuel or can't get fuel. We have to pull over and shut her down, wait a minute, fire it back up and she's good again. But it does this intermittently. Some days no problems, other days it will do it 4 to 5 times. Here's what has been done: all levels checked, new fuel pump, new fuel filter, new air filter, all 8 injectors replace, undercover wire harness replace, new EBP sensor replace and a new ICP sensor! Still doing the same thing! I have over $5,000 in repairs and the dealers are stumped. They keep taking my money, but the repair still isn't done! In all fairness, I did get $2,800 back, but it's still ridiculous!
