I've just been lookin at different mods that have been done to trucks and i keep seeing something called *I think* a fuel waste gate delete? What does it do and why would it be done?

Look at your turbo, look for a red line. Pull the end off and plug it. It allows you to achieve more boost and more power.
There is a little more to it then that someone else will chime in soon.
