Building your own custom interior trim kits

I had this idea I wanted to try. Im going to cover my dash bezel trim and door lock panels with the left over camo clad material I have. The camo clad does not have a glossy finish. I want to coat it with something that will protect from getting scratched or damaged from daily use. I thought about clear coating it with automotive clear coat but Im worried about scratching the clear coat. The I thought about coating it with a clear epoxy but I am worried about making it look smooth. Could it be sanded down and buffed? What would you guys suggest?
