Personally, I would see if a weather proof inverter is available and mount it in the bed with the outlets. The inverter is going to generate heat. Depending on the in cab location, the heat might be excessive if you operate a 120v tool/source for extended period.
Make sure you check the duty cycle (use time vs cooling time). Install circuit breaker(s) or fuses on the 12v feed to the inverter.
