Gettin' my facts straight

I just wanna at thanks in advance and yes I've searched and generally found the answers I'm lookin for but I want to make I've got all my facts straight. Today I ordered a Spartan, s&b intake, and 5" dp back exhaust and also a 4" downpipe. So my questions.

With a Spartan tuner I can just unplug the sensors from the wiring harness and leave them in the factory pipe? I don't have to have anything plugged in at all?

For the time being I just ordered an egr block off plate from RCD and run that until late spring or summer when it warms up before I do the full delete. So can I just download the egr off tunes from Spartan and run those without doin the full delete?

Sorry I know these questions are gettin old I just want to make sure I have the right info before I install everything. I don't want to get everything in the truck and realize something is wrong when I thought I was doin it right.
