head gaskets fail & tunes.

I have a head gasket problem on my 05 98000 miles.
getting ready to the HG Job and ordered all my parts @ sunriseford like mentioned in one of the sticky,s.

Installed a Mercury (outboard engine ) 0-15 psi waterpressure gauge and watched the numbers on one of the tunes i have.
As long as i baby it ,psi sits ride arround 10-12 when warm.
On the interstate though at 60-70 mph psi keeps rising and climbs past 15.

next day,stock tune.
all normal,..warm up,open up degas cab,..drive on the german freeways(wich have no speed limits) and FLOOR IT!...psi stays ride arround 10-12.
picked up my trailer and floor it....climbed to 14 but could not make it puke.

today i,m going to load a street tune and see what happens.
Also going to record rpm in OD & TC locked at 60/65 iirc it was like 1500 or so.
It is at that moment psi spikes when you give it some throttle.

Street tune loaded..warm up etc.Cruisin @60 miles psi sits at 12 and if i throttle up just a little bit Psi climbs up to 16 in a matter of seconds.Stock tune did not raise psi.
Rpm 1500 @ 60 to me feels kinda low and when you hit the pedal with a locked converter the stress on the headsbolts seems huge to me.
ah well,... ARP,s are on the way,i am just trying to understand this cilinder pressure/timing thing.
