A different kind of delta question...

I've read over and over again that the EOT and ECT temps should be the same after a motor is allowed to cool - for example in the morning after allowing the truck to cool all night. Just wondering what the significance of this is? Mine are always within a couple of degrees, but again just wondering what this is an indication of.

If they were different temps, it would be an indication of a bad sensor! A few degress difference is totally normal! But lets say your ECT was showing 85 and your EOT was showing 140, it would be a good indication of a bad Oil Temp sensor!
