A/c fan

Does anyone know when the fan should engage for high head pressure?
Mine will get to 375 psi. and sit their for a minute or two before the fan will come in. I know it should not be like that. I have replaced the high side switch. No change. I do have an egr delete kit. egr valve is plugged in . Thanks for any help.
