Shudder when accelerating/turning

Just as it reads, whenever I accelerate from dead stop, truck kinda shudders wether going straight or turning. I wanted to blame it on the new A/T 33" tires I put on before winter but I'm starting to think otherwise...any guesses?

Also, would improper coolant/water ratio cause higher temps on the highway? I was getting 202ect and 208 eot at 65mph flat road.
