Deltas?????
I'm running 77-78 and watching my deltas around 11-12. ECT is 190, EOT 201-203 mainly at 202. Also ECT fluctuates between 190-192 and EOT stays the same. Ambient it is 60*

your driving too fast to accurately calculate deltas.... running faster makes your oil hotter!
Go back and test driving 60-65 MPH and i'm sure your deltas will be better. SO FAR by the information given I wouldn't stress out if I was you because your deltas seem ok...Try going slower and seeing what happens to them

no prob... let it smooth out some more im pretty sure it will go down enev more... are you running empty? cuz your supposed to when checking also
