Help me please! Weird WOT problem.

So I changed the oil in my '03 F250 SCSB 4x4 today for the first time!* All went well, used Valvoline Premium Blue Extreme and the Motocraft oil filter. After the oil change was done, I started it up, let it warm up for about 5 minutes and decided to take it out for a drive. I took it out, all was well. I was heading down the road at about 40-45 mph and put my foot in it. The truck took off like normal but then, all of a sudden the revs jumped back and forth real quick, almost like I hit a rev limiter (but I didn't, it was from maybe 2k to 2.75k revs). It had me right scared. I tried burying my foot in it from a stand still, nothing... Only while moving in around 40 mph when I tromped on it, did it get all screwy.

The truck is stock, CTS is on the way.

*I just bought the truck.

No one has ever had this happen before? Could this be a fuel pressure problem, I haven't done the Blue Spring mod yet, as I'm waiting for that part to arrive.

Could be a fuel pressure issue, high pressure oil system problem, FICM, voltage or in the case of an 03, a failing ICP sensor.
More info would be needed (from the CTS and the fuel pressure gauge).

Pull your EGR valve, probably all gunked up with soot. If so spray with carb cleaner and clean with a wire brush till shiny. Try not to damage your o rings. Could take care of your problem.

Are you running any tunes? Mine does the same thing on my 150hp tune, because the fuel system cannot keep up, causing it to starve the truck. If you do that too many times you will burn up your injectors. Blue spring will solve that problem by bumping your fuel ressure from 55psi up to 70psi. That is about all stock injectors can handle. Hope this helps!

No tunes on the truck. I pulled the EGR valve this morning and cleaned it up. Tried a couple of times to recreate the issue and it didn't happen. So for now I'm happy. I will report back when the CTS arrives.
