Truck running cooler than it should?

Today I drove about 140 miles round trip. It's starting to get cold here today, around 35 most of the day. After driving about 20 miles I noticed that my ECT was 170 and EOT was 168. How could that be right? EOT should be higher than ECT right? It was all highway driving. Normally the EOT is higher than the ECT.

Anyway, my main question. I have noticed that the coolant never seems to reach 195* like it should according to my CTS. Could it have some lower temp tstat in it?

I know it's important that these diesels reach proper operating temps. Have only had the truck since it started cooling off so not sure what it would be like if it was 105* here in the summer.

Do you guys' trucks run that much cooler in the winter?
