maybe when you flushed it you didnt get every drop of oil out.

if it is a head gasket the oil will normally go to the coolant. The oil is under what 60 psi? and the coolant isn't under but 10-20 psi. And if it's running good I doubt its a gasket, they normally smoke to beat all hell when one lets loose.

I'm guessing you didn't get ALL of the oil out. Headgaskets are normally smokers, and yes they are very tough, usually good to about 40 PSI however running straight water with no anti freeze can kill a headgasket over time also.

I don't think you got all the oil out. Run simple green threw it. Over at Ford when a 6.0 blows the oil cooler and mixes with the coolant they flush the system at least 4 times.
