Spicy Shrimp And Scallop Stir-Fry
Sauce
2 tbsp mild chili sauce 4 tbsp chili bean sauce 4 tsp Chinese black vinegar or cider vinegar 1/4 tsp salt 1 tsp freshly ground black pepper 4 tsp granulated salt 2 tsp sesame oil 1 tsp cornstarch pinch of red pepper flakes (optional) Stir-Fry 1-1/2 tbsp vegetable oil 1 tbsp minced, fresh peeled gingerroot 2 cloves garlic, minced 1/2 lb raw shrimp, peeled and deveined 1/2 lb sea scallops, rinsed well and patted dry with a paper towel 3 green onions, chopped Combine all the sauce ingredients in a small bowl and set aside. Preheat a heavy skillet over high heat. Add the oil to the pan and swirl it around to coat the skillet. Stir-fry the ginger and garlic until fragrant but not browned, then add the shrimp and scallops to the pan. Stir-fry for 2 minutes. Add the sauce mixture to the pan and cook for 3 minutes or until the shrimp and scallops are cooked through but still moist and tender. Stir in the green onions and serve immediately. Serves 4. |
