Spicy Shrimp And Scallop Stir-Fry

2 tbsp mild chili sauce
4 tbsp chili bean sauce
4 tsp Chinese black vinegar or cider vinegar
1/4 tsp salt
1 tsp freshly ground black pepper
4 tsp granulated salt
2 tsp sesame oil
1 tsp cornstarch
pinch of red pepper flakes (optional)

1-1/2 tbsp vegetable oil
1 tbsp minced, fresh peeled gingerroot
2 cloves garlic, minced
1/2 lb raw shrimp, peeled and deveined
1/2 lb sea scallops, rinsed well and patted dry with a paper towel
3 green onions, chopped

Combine all the sauce ingredients in a small bowl and set aside. Preheat a heavy skillet over high heat. Add the oil to the pan and swirl it around to coat the skillet. Stir-fry the ginger and garlic until fragrant but not browned, then add the shrimp and scallops to the pan. Stir-fry for 2 minutes. Add the sauce mixture to the pan and cook for 3 minutes or until the shrimp and scallops are cooked through but still moist and tender. Stir in the green onions and serve immediately. Serves 4.

Ford Diesel/Senior/Master Tech who placed 2nd overall in Ontario on the Fix-It-Right-First-Visit score for 2010

....who works at a dealership that now employs SOME half decent looking female employees since they overhauled most of the administrative staff

....but STILL loves hot women with big boobies

....and STILL hates working on E-Series with 6.0L
