elk chili

Think I'll swing in here on my way to stir up the pot in the politics forum...

Hi, I'm Mtndizzle and I'm addicted to chili. I don't make it often enough but I love it. Here's my latest batch

2 lbs grass finished ground elk
1 serano pepper
1 anaheim pepper
1 jalapeņo pepper
Almost 1 red onion
****load of garlic
1 can chili beans
1 can black beans
1 can crushed tomatoes
1 can tomato sauce
1 can tomato paste

Dice all veggies up and saute in olive oil until onions are transparent
Add meat (I've made this with beef and bison too) and brown
Add beans, tomatoes, & sauces
Add spices. I add a little different amounts/types every time and I never measure so I'm useless at this step

Simmer for at least an hour on low
Shovel into bowl
Add cheese and sour cream
Bulldoze into face
Be careful, it's still warm

I don't go to spicy yet, just enough to tingle. I've got some friends who are growing Carolina Reaper and Ghost Chili peppers this summer. I may play around with a few of those. Hopefully I don't blow a gasket with those
