I am about to smoke a turkey too. It looks like you left the apples whole and what is the safety pin for?

You can BBQ in any weather!! Just takes more fuel!!

The pins keep the skin together so it won't dry out.

What was the reason for leaving the apples whole as opposed to quartering them up?

I just cored and halved them. The last time I quartered them they fell out when I rolled the bird over.
