Anyone using vacuum dewatering?

I picked up a couple new restaraunts, and they seem to have more suspended / emulsified water in their oil than my other restaraunts do. My current heat / settle setup just cant do the job. I have been looking for a better way, and read a little about vacuum dewatering, and figured since I have access to a really good pump, I'd like to try it, but can't find much info on it. Anyone had any experiance with this method?
