Why does vegetable oil get foamy?

I'm guessing old and a lot of water? I googled but came up with a bunch of stuff for cooking. One of my restaurants called me up to pick up oil. Got it home and all I can see after taking cap off the cubies is foam and a gross smell. This guy owns another restaurant about 100 miles away so Im thinking this could be old oil he was saving for someone that never showed up to get it (the reason I pick up his oil now).

Does it smell like puke? Have you checked with the restaurant to make sure it doesn't have boilout in it? It's probably not that though but can't hurt to ask.

I've gotten oil that had just a little foam on the top, but nothing major.

I've never seen the foam reappear after settling and centrifuging, but what causes it? I have no idea, I'd guess it has something to do with what they cook or clean with??

hmm yeah it smells like sweet vomit if there is such a thing. Im wanting to throw it away....thoughts?

Its starting to go bad. How much of this stuff do you have? Do you have good stockpile of oil? If so I would turf it. If not you probably could use it as long as its not too far gone. I have burnt oil that smelled bad with no problems. But if its really bad I wouldn't chance it.

I have over 300 gallons of oil on reserve so this 30-40 gallons isnt going to hurt me. I think I did the guy a favor by taking it from him. He had another guy who he used to give it to and he said about 6 months ago the guy stopped showing up to the restaurant that is like 80-100 miles away so I think this might have been from that. I will ask him next time I see him.

To be on the safe side I would get rid of it. I would put an add on craigslist. Maybe someone can make bio out of it.

found out what it is. Its flower thats been broken down to pure starch.

How did you determine this? If it smells like puke it is starting to go bad though. Perhaps it is being way overcausious to say throw it out because chances are that it will burn just fine. Maybe you could mix it in with some good VO & burn it.
