2003 7.3 runs funny when motor is cold...

hey guys, i recently bought a 03 SD 7.3 and added 4in downpipe and 5in dump for exhaust, now when sitting for a bit and the motor being cold (not outside temp, i live in Florida) when i hit the gas it "bucks" and hesitates and RPMs climb a bit but it wont move. Now when it warms up it spins th hell outta the tires and shifts awesome. no gauges are on and it runs great, all piping is welded and secure no leaks. i havent used any additive in awhile, could it be possible that bad gas is to blame? also, i noticed that the 6.0 is decntly louder (turbo and exhaust wise) than mine with the same setup, is that the case or am i just mentally thinking so.
