cold start issues

Ok, I changed both batteries because they were going below 11 volts on start up (9.8 volts). Now when the truck starts it fluctuates between about 400 rpm and about 1000 rpm for about 30 seconds. It's like it's trying to catch but can't. It takes about 2-3 seconds to go from 400rpm to 1000 rpm and back to 400 rpm. after this, the truck runs fine. Any one got any ideas?

Could it be an Oil issue? I'm running 15W30 and its getting down to about 10 to 15 degrees F at night.

I usualy keep it in a heated barn or plog it in around 25 deg, but I have been leaving it out side because next weekend I am going to the U.P. Michigan snowmobiling and the truck will be sitting for 5 days without power. I want to make sure that it starts when I return.
