2012 interior

Is it possible to completely replace the interior in a 7.3 to a new model? Are there wiring adapters or harnesses that work plug and play?

i assume u mean a super duty body 7.3
there is no plug and play way to do it.. the biggest/main issue is if you want to include the dash.. that will require fab work, etc
the seats should bolt up and then you would need to wire in some stuff as well (heated/cooled seats, etc) door panels shouldnt be a major issue if i recall
and seats should bolt up as well i believe.. center console is prob diff though.. 08-10 console bolts right up not sure on the 11+ trucks with the longer console
