Unless you plan on running huge horsepower I would not bother with the 180* T stat. On the other end of the spectrum I have the 203 T-stat and the only difference I noticed from it was crappier AC in the summer (I have added a ball valve to mitigate that) so I would save the scratch on that too.
I have the HPX and the truck is a little smoother, cold starts where a little better and it is slightly quieter so for 45 bucks it is worth it.
If you plan on keeping factory injectors or go to small performance injectors then it is worth it. Plan on going big then just save up and do a RR. I would recommend doing the pre-pump mods as well and if you are going to mess with fuel pressure you should really have a fuel pressure gauge.
