Trading auto trans for manual on 99.5

I was looking around the forums and saw people trading auto for manuals and was wondering kinda to pros and cons of going standard. I'm seriously considering as i like my auto but gettin tired of only having 4 gears and not being able to shift into the gears I want to be in. I'm also building another 7.3 engine right now to do about 700-750hp, but I also don't know much about any kind of power levels with a standard trans. Any info helps, I'm just really interested in the idea. I know the labor and modifications are there and is a bit of work, I've already had to pull my trans out 2 times in the drive way...
