Acceleration hesitation and rattle

Have an E99 dually with a 120,000 miles on it. I installed an edge evo ht programmer. During a hard acceleration the truck has a rattle like its running out of fuel. If I lift my foot a little the rattle will go away and the engine will catch up. The truck only does this on the 80 & 100 HP settings. It seems to run perfectly on the lower settings and in stock mode. I didn't think a simple programmer would require more than stock fuel flow? The truck starts to pull hard then just kind lays down until I lift my foot. If I try to accelerate slow it's no problem but fast an under load it just sounds like a Diesel engine running out of fuel. I'm not super familiar with powerstrokes and could use a lil direction! Thanks for any input!

Possibly hitting boost level, but probably running out of fuel OR high pressure oil.
Only way to tell is with a gauges/data.
