Runs Great after running and sitting

I have a 2001 7.3L. Has 230K miles on her. It seems to run *great* after I have driven it, and it sits for 30 mins or so after running, and then I restart it. I mean it normally runs "good" if I start her and run her. But I very often notice after shutting her off, and then restarting 30 mins or so later, it runs REALLY good. Like I barely touch the accelerator, and it's just running with all kinds of power and accelerating effortlessly. Is there some kind of sensor or something that is warming up after "baking" while it sits hot? Or maybe the Turbo is just loosening up and spinning easier? I am hoping it's something simple like a sensor, and it would be great if it ran like this more consistently. No performance mods have been done yet. Air cleaner, fuel filter are relatively new, and I keep up on the oil changes, and tranny too. Thanks for any ideas...
