Weird fuel? problem

So I was coming back from Quartz Mountain last week when my truck just started to lose power like it was running out of fuel. I slowed down to 30 and then it picked up and started running fine. The whole way back on my 3.5hr drive it did a few more times with exactly the same thing happening every time. I checked the oil level, changed the fuel filter, and the pump was recently replaced. The fuel bowl fills up fine every time. After sitting for a week it starts up then acts like it runs out of fuel. I'm not a diesel expert so I went through all the pages I could find and I'm thinking maybe the hpop? I know the CPS was just changed less than two years ago. It only has around 145000miles. We hardly ever drive the diesel but it really bugs me that it isn't wanting to work. Any help would be much appreciated
