7.3 running bad

i have a 99 ford f250 with a 7.3 it has been running rough and smoking real bad at times . it would also die while i was driving it . had it towed to a shop it sat there for two weeks before he could work on it . he did nothing to it but test drove it and it runs great for him went and picked it up and it runs great now he was saying maybe fuel system needs to be cleaned not sure if thats it or not any help would be appreciated thanks.

what color was the smoke?

sounds like a turbo issue. id start with the easiest things. air filter. then intercooler boots. wastegate might be stuck open. does it sound like it spools up?
