What would cause my brakes to lock up?

My '96 has brand new (1 yr ago) front calipers, rotors, pads, the works. What would cause them to lock up as soon as I barely engage the pedal?

Sounds like the caliper slides are sticking. I would try some grease on them, and then see if that corrects it. Oh, also, see if maybe the caliper mounting bolts have gone missing. I changed my brakes, and I had 2 caliper mounting bracket bolts back themselves out. Causing the same kind of problem you are having, it seems.
