Keeping a 7.3 maintained

Just bought a '97 7.3 (bone stock) and replaced oil/ filter and fuel filter. I'm just looking to keep it "maintained" until the spring time and then upgrades will be made. I was wondering if there was anything else you guys could think of I should do?

grease the greasable parts and check the SCA level in the coolant

94.5 F250 Reg Cab 4x4 5 speed 4.10 276000 plus miles

97 F350 Crew Cab LB 4x4 5 speed 3.55 320000 plus miles (parts truck)
