installing new steering gear

I have replaced all my steering components so I have no reference points.

With the new steering gear, how can I tell if the shaft is turned to the correct position ( number of turns to be center) to then put the steering shaft in.

As for the steering wheel, if I turn it stop to stop, it has an uneven amount of turns from center, to the left I can 2 full turns and the the right I can 3.

so basically how should I set everything up to begin bolting it all in?

Your absolutely right about getting the gearbox centered and it needs to be done first ,the Pitman arm splines allows only one position . All Pitman arms are perpendicular to the wheels ,facing forward or rearwards with steering wheel centered .Our trucks obviously point forward .
After this is done attach tie rod to the pitman arm and adjust the wheels to fit 'the centered steering wheel ",and you should be good to go

ok thanks I got it figured out, the flat spot on the input splines of the gearbox needs to be at the bottom, therefore giving me same amount of turns left to right..

got the shaft in and gearbox bolted up...the bogenson shaft is awesome!

as for the fluid what does everyone use? I was just going to use atf+4
