Since we're ont he subject, what years/trim levels would I be looking at to find a tailgate that just has the little Ford logo in the corner, instead of the huge ugly aluminum piece spanning the tailgate?

That was a '97 only thing.....but:
Get a tailgate off a 92-96 "XL" or "custom" trim level truck, and remove the "FORD" letter decal and stick an oval emblem on.

I forgot they did the FORD in lettering too, either one works! I just can't stand that huge trim piece on the back of mine.

Probably, but the 87-91 tailgate has "FORD" stamped in and wouldn't be correct for the truck.
