This may be the wrong answer, but aren't there just two little nuts that hold the emblem on? I mean I did a billet grill for a buddy back in the day on a 7.3 and I seem to remember that being the case....

they actually just clip in, take the 6 screws out and the grille comes right off.
then you can pop the emblem out. i just replaced to broken ones earlier tonight so this is fresh in my head! good luck. what color you paintin it?

the only thing i could think of that would be shiny but still be protective would be some kind of no-gloss sealant. clear coat under the flat black wount provide any kind of protection for the paint and probably make it hard for the pain to stick as well. maybe just lots of thin layers of flat black will work? i am not a body guy so i dont know for sure.
