Installing the second tank is a great idea. Through Canada you'll be able to find fill stations, but it might be nice to have the option to bypass some of the more remote, and expensive, ones. And once in AK, fill stations can be few and far between depending where you're at.
buying a couple of used atv's, or an argo

, wouldn't be a bad idea. Or you can rent them too.
And not to discourage your plans for the trip, but Alaska is NOT the place to "wing it". Do a lot of research and plan your trip well. It'll be worth the extra effort when you finish a successful vaccation with no, or few, mishaps.
