Head gasket?

So my '08 has developed some strange issues. As it warms up I get hot air between about 100 and 170 degrees ect, then it blows cold air. The temp will steadily rise to about 200, when I get hot air again, then drop to 192 where it stays. Hot air is hit and miss from there. Egr and dpf are in the landfill, using mini maxx mildly tuned. Installed new thermostats last weekend with no change. Also pukes coolant sometimes at 20 psi boost, sometimes not at 40 psi. Any guesses? I'm in southern Alabama if anyone knows a reputable mechanic here.

Is it blowing hot when you idle and cold when you drive? Could be a radiator fan.
Could it be the blender door on your a/c?

Temp drops quickly when I stop. This morning it got up to 134 degrees, then dropped to 120 and stayed there for most of my drive to work.
