Elbow, Egr delete & Egt temps

So everything seemed to be good, been running about 2 weeks. Elbow installed about a week ago, egt temps seemed to have dropped considerably once at idle over factory cac almost immediately from what I noticed. Well today I seemed to have rolled coal out the tail pipe for a good bit (new to this diesel world) due to slow acceleration & me wanted to throttle out ASAP. Stopped for lunch & noticed pyro temp increasing at low boost & idle? Could I have buggered up the probe already being tuned a few mos/Egr removed 2 weeks ago w/41k on her? I've read up on this pyro temp at sometime & thought I read aftermarket pyros are better? Parked her, checked Diagnostic system & had a P0480 coolant circuit fan code. Any thoughts would greatly be appreciated, diesel/tuning is all new to me

Lack of coolant flow will increase cyl temps which increases exhaust temps. Your gauge is fine. Follow the code.

Fan clutch & 2 temp sensors was the diagnosis.
