So if the day before I drove 300 miles to and from some where and the next day I drove like 10 miles this could happen?

From reading the above, my guess is, the truck expects the EGT sensor to read the same as the ambient temperature after sitting for at least 8 hours. Yours is either reading higher or lower then ambient temperature so your EGT sensor is probably bad. That's my best guess.
