check for leaks around the radiator tank ends and also also all the hoses. check your degas also to see if it puking. another point of leak are the egr coolers.
take it to another dealer. losing a gallon of coolant every 500 miles is a lot. if its cavitating and going into the engine it could get hydrolocked and you dont want that on a trip towing a trailer. id postpone the pickup until i got the issue resolved. if you want first hand look change your oil. if that much is going in then it should be apparent in the oil drained. if not have the dealer do it so they can see it.
using cat is up to you. warranty vs better coolant but changing coolant wont solve your issue right now.
